This can be for a range of reasons:
Firstly - Check that when you are publishing you're site, you select the 'Best Fit' option. This will fix the problem 9 times out of 10.
Secondly - If the first option didn't work, go to the settings tab in you're editor and make sure that the resolution is big enough. Play around with the resolution until you find a balance that works for you.

Opening you're site..
wix.com > my account > launch editor > and we're in!
Getting our site ready to edit..
Now you have you're site open, let's set the size of its publishing boundaries - to do this go to the 'settings' button up the top and click it - this will open up a 'dialog box' where we can set all of our preferences.
Now find the "Page: Width: XXXX & Page Height: XXXX" boxes - a good resolution to begin with is 1200 x 1100 but you can adjust the resolution to what ever suits you're monitor and theme best.
Developing our theme..
Now that we have set our sites resolution - lets decide what 'background' color to use:
On the same settings dialog box there will be a 'Background Color' button, click the blue box ( this blu is the default color) and you will be presented with a color pallete - choose whichever color you want.
Close the 'settings' dialog box and travel to the 'page parts' nav-bar on the top-left of you're screen.
Select the 'Background' option - this will present us with a range of colors and designs of which we can use as our sites background!
I suggest you use a neutral color like black or white - but if you want your site to be a little bit flashy, feel free to pick any vibrant background you wish!
